Gastric lipase, also known as lipase, gastric, is an enzymatic protein secreted by the gastric chief cells in the stomach. Bovine Gastric Triacylglycerol Lipase is encoded by the LIPF gene in cattle. LIPF is involved in the metabolism of dietary triglycerides under acidic conditions, is synthesized by gastric chief cells in the fundic mucosa of the stomach, and is responsible for 30% of triglyceride digestion in humans.
