Acetylcholinesterase (AChE), also known as choline esterase I, is a vital enzyme in the body. It catalyzes the breakdown of acetylcholine, a neurotransmitter essential for nerve signal transmission. AChE cleaves acetylcholine into acetate ion and choline, allowing efficient nerve communication. Bovine Acetylcholinesterase is encoded by the ACHE gene in cattle. All known acetylcholinesterases have three sets of cysteines that form disulfide bonds.
