Target Information
Alpha-S2 casein is encoded by the CSN1S2 gene in bovine. It represents up to 10% of the bovine CN fraction and exists in 2 major forms and several minor components. CSN1S2 is an important gene associated with milk production in ruminants. CSN1S2 encodes a protein called αs2-casein, which is one of the phosphoproteins found in milk. It plays a crucial role in the transport of calcium phosphate within milk. Additionally, casocidin-I, a component of αs2-casein, inhibits the growth of certain bacteria like E. coli and S. carnosus.
