Pediococcus pentosaceus is an advantageous strain of lactic acid bacteria (LAB) known for enhancing the flavor and nutritional value of food, as well as extending the shelf life of animal products. Research indicates that bacteriocins or bacteriocin-like substances (BLISs) generated by P. pentosaceus have potent antibacterial effects within the microbial ecosystem.
