Heat Shock 27kDa Protein 1 (HSPB1), also known as heat shock protein beta-1, is a remarkable small heat shock protein that functions as a molecular chaperone. Heat shock 27kDa protein 1 is encoded by the chicken HSPB1 gene. HSPB1 protein forms complexes with αB-crystallin in aged chicken muscle and is suggested to be a candidate age-related biomarker for verifying the age of chicken meat.
