Target Information
Bovine alpha-S1-casein (CSN1S1) is a major protein component of Bovine milk, accounting for approximately 37% of the total casein content. It is part of the alpha-casein family, which is known for its high phosphate content and ability to bind significant quantities of calcium, making it nutritionally important. Alpha-S1-casein plays a crucial role in the capacity of milk to transport calcium phosphate and exhibits antioxidant properties with DPPH radical scavenging activity. In cattle, it is specifically secreted in milk and is essential for the nutritional value of milk.
