Shrimp myosin is a major structural protein found in shrimp muscle tissue, playing a critical role in muscle contraction and movement. Composed of heavy and light molecular chains, this heat-sensitive protein is highly valued in food science for its functional properties. During processing, shrimp myosin readily undergoes thermal gelation, which directly determines the texture, water-holding capacity, and quality of seafood products like surimi. However, it is also highly susceptible to degradation during frozen storage, making it a key focus for quality preservation.
