Target Information
Fumonisins are a group of mycotoxins produced primarily by Fusarium molds, especially F. verticillioides and F. proliferatum, that commonly contaminate corn and other grains. They are a significant food safety concern for animal-origin foods because these contaminated grains are often used as animal feed. When livestock, particularly horses and pigs, consume contaminated feed, fumonisins can cause severe, species-specific diseases such as equine leukoencephalomalacia ("moldy corn poisoning") and porcine pulmonary edema. While the transfer of fumonisins into meat and milk is generally considered limited, the health risk to the animals themselves affects the food supply chain.
