Leuco Malachite Green (LMG) is a metabolite of Malachite Green (MG), a synthetic dye that was historically used as a potent antifungal and antiparasitic agent in aquaculture to treat fish. The use of MG and its metabolite LMG is banned in many countries for food animals because of their toxic properties. LMG is the more stable and persistent form of the compound, and it readily accumulates in the fatty tissues of fish. Its presence in fish products is a serious food safety concern because both LMG and MG are classified as potential human carcinogens and mutagens.
