Target Information
Citrinin is a mycotoxin, a toxic secondary metabolite produced by several species of fungi, including Penicillium and Aspergillus. While it is most commonly found in grains and other plant-based foods, it can also contaminate animal feed. The concern for animal-origin food safety arises from the "carry-over effect", where animals that consume contaminated feed can accumulate citrinin in their edible tissues (e.g., muscle, liver, kidney) and products like eggs and milk, posing a risk to human health.
