Target Information
Arachidonic acid (AA) is an essential fatty acid and a precursor in the biosynthesis of prostaglandins, thromboxanes, and leukotrienes. Arachidonic acid has a 20-carbon chain and four cis-double bonds. The first double bond is located at the sixth carbon from the omega end. Chicken meat with a reduced concentration of AA and a reduced ratio of omega-6 to omega-3 fatty acids has potential health benefits because a reduction in AA intake attenuates prostanoid signalling.
