Zearalenone (ZEN) is highly relevant to the safety of animal-derived foods. It's a mycotoxin produced by Fusarium molds that commonly contaminate grains like corn, wheat, and barley used in animal feed. The primary concern with ZEN is its powerful estrogenic effects.
