In felines, chymosin (CYM) is an aspartic protease produced in the gastric mucosa of newborn mammals to digest casein in milk. It hydrolyzes the specific peptide bond in κ-casein (e.g., Phe105-Met106), causing casein to aggregate. This process extends milk residence in the gut, enhancing nutrient absorption. Chymosin is also widely used in cheese-making to coagulate milk.
