Chicken Allergen Gal d 1, commonly known as ovomucoid, is the dominant and most clinically significant allergen found in hen's egg white. It is a 28 kDa glycosylated protein belonging to the Kazal-type serine protease inhibitor family, characterized by three distinct structural domains. Unlike other egg allergens, Gal d 1 is exceptionally resistant to heat and proteolytic digestion. Consequently, individuals sensitized to Gal d 1 often react to both raw and cooked eggs, making it a primary biomarker for persistent egg allergy.
