Target Information
Natamycin is a 33-membered macrocyclic polyene antifungal produced by Streptomyces natalensis, distinguished by a conjugated tetraene chromophore and a single carboxyl group attached to the macrolactone ring. The molecule measures 1.2 nm across and intercalates into fungal membranes via its hydrophobic polyene region while the polar carboxyl remains external, forming sterol-dependent pores. Its amphiphilic structure yields limited water solubility (≈50 mg L-¹) yet high stability under acidic conditions. Antibodies generated against natamycin-protein conjugates recognize the intact macrolide with negligible cross-reactivity to other polyenes such as nystatin or amphotericin B, permitting direct tracking of natamycin distribution in complex matrices.
