Bovine beta-lactoglobulin (β-LG) is a 18-kDa globular protein and major component of bovine milk whey. It belongs to the lipocalin family, featuring a hydrophobic binding pocket that sequesters fatty acids, vitamins, and other small ligands. Expressed exclusively in bovine mammary glands during lactation, it contributes to milk nutrition, stability, and ligand transport. Beyond nutritional roles, it modulates milk viscosity and protects labile molecules from degradation. As a prominent bovine milk protein marker, β-LG is a critical target for studying lactation physiology, dairy product biochemistry, and bovine-specific food science or immunological research.
