Target Information

Alpha-S1 casein is one of the four casein proteins found in goat's milk, and it plays a crucial role in cheese making. Alpha-S1-Casein is encoded by the CSN1S1 gene in pigs. It has been reported that CSN1S1 deficiency leads to degradation of milk protein components. This effect is probably caused by the destabilization of milk micelles, since CSN1S1 plays a crucial role in their membrane.
