Target Information
Calpain-3 (CAPN3) is also known as p94. It is a muscle-specific member of the calpain large subunit family. It specifically binds to titin, a protein involved in muscle contraction. Calpain-3 is encoded by the CAPN3 gene in pigs. The CAPN3 gene is expressed in porcine skeletal muscle and is involved in the regulation of post-mortem calpain activity. Research has shown that the CAPN3 gene is associated with meat quality traits such as tenderness, juiciness and flavor.
