Okadaic acid (OA) is a crucial component of diarrhetic shellfish poisoning (DSP) and is directly related to animal-derived food safety, specifically concerning seafood. Okadaic acid is a marine biotoxin produced by certain species of microalgae, called dinoflagellates. Filter-feeding shellfish, such as mussels, clams, and oysters, consume these algae and can accumulate high concentrations of the toxin in their digestive glands. Humans who consume contaminated shellfish can develop diarrhetic shellfish poisoning, characterized by severe gastrointestinal symptoms like diarrhea, nausea, vomiting, and abdominal pain. The toxin is heat-stable, meaning cooking does not destroy it.
