Ochratoxin A (OTA) is highly relevant to the safety of animal-derived foods. It is a potent mycotoxin produced by fungi like Aspergillus ochraceus and Penicillium verrucosum, which can contaminate a wide range of agricultural products used for animal feed, including cereals and coffee beans. When livestock, especially pigs and poultry, consume contaminated feed, OTA can accumulate in their tissues, particularly in the kidneys and liver, and can also be found in their blood and meat. This poses a significant health risk to humans who consume these animal products, as OTA is a known nephrotoxin (kidney toxin) and a potential carcinogen.
