Nitrofurantoin is a nitrofuran-class antibiotic whose use in food-producing animals has been banned in many countries. While the parent drug is quickly metabolized, its metabolite, AHD, is stable and can persist in animal tissues, such as in meat and seafood. AHD is a serious concern because it is considered a potential human carcinogen and mutagen, making its presence in the food supply a significant public health risk.
