Target Information
Natamycin is a naturally occurring antifungal agent produced by the bacterium Streptomyces natalensis. It is widely used as a food preservative to prevent the growth of molds and yeasts on the surface of various animal-derived foods, such as cheese and dried or fermented sausages. By inhibiting fungal growth, it helps extend the shelf life of these products and prevent spoilage, which can also protect against the formation of harmful mycotoxins. It is approved as a food additive in many countries.
