Mercury (Hg) is a toxic heavy metal that exists in various forms in the environment. The primary concern for food safety is methylmercury, a highly toxic organic form. Methylmercury accumulates in the food chain, a process known as biomagnification. This is particularly problematic in aquatic ecosystems, where small organisms ingest mercury, which is then passed up to larger fish, and so on. As a result, predatory fish like tuna and swordfish can have high levels of mercury in their tissues.
