Target Information

Pentosidine (PTD) is a biomarker for advanced glycation end products (AGEs). AGEs are biochemicals formed continuously under normal circumstances, but their production accelerates under various stresses, especially oxidative stress and hyperglycemia. AGEs serve as markers of stress and can act as toxins themselves. In broiler breeder hens, there is a linear increase in meat toughness with age that correlates with the accumulation of pentosidine.
