Chicken pepsin can be extracted from the proventriculus of chickens as a valuable slaughter by-product. Chicken pepsin has an important role in the digestive system of chickens, mainly in its ability to degrade proteins. Chicken pepsin is able to effectively activate swine pepsinogen and exhibits the same catalytic efficiency as swine pepsin. This process is autocatalytic in nature and is independent of the source of chicken pepsin.
