Carbamates are a major class of synthetic organic pesticides and veterinary drugs widely used as insecticides, acaricides, and molluscicides. In livestock production, they are applied to eliminate ectoparasites (such as mites, ticks, and fleas) from animals and their housing, and livestock can also ingest them through contaminated feed or forage. Because they are highly biologically active, residues can easily migrate into meat, milk, and eggs. They pose a critical food safety risk due to their acute neurotoxicity; like organophosphates, they inhibit the acetylcholinesterase (AChE) enzyme, leading to severe nervous system overstimulation in humans, which requires strict enforcement of Maximum Residue Limits.
