The CSN1S1 gene encodes alpha-S1-casein, one of the four primary casein proteins found in goat's milk and essential for cheese production. The casein genes in goats exhibit high polymorphism with numerous synonymous and non-synonymous mutations. 20 variants of the alpha-S1-casein protein have been identified in goats.
