Elastin is a protein that plays a crucial role in the extracellular matrix of vertebrates. Elastin is highly elastic, allowing tissues in the body to resume their shape after stretching or contracting. Bovine Elastin is encoded by the ELN gene in cattle. It has been found that the percentage of collagen and elastin in the longissimus dorsi of beef animals is not a critical measure of tenderness of meat.
