Target Information
Chymosin, also known as rennin, is a protease found in rennet. It belongs to the aspartic endopeptidase family (MEROPS A1). Bovine chymosin is an aspartic protease that selectively cleaves the milk protein kappa-casein and is widely used to promote milk coagulation in cheese making. Historically, chymosin was extracted from the stomachs of slaughtered calves. However, most commercial chymosin used today is produced recombinantly in various organisms.
