Target Information
Botulinum toxin is an extremely potent neurotoxic protein produced by the anaerobic bacterium Clostridium botulinum and related species. It is a major hazard in animal-derived food safety, particularly in inadequately processed or poorly preserved vacuum-packed meats, sausages, canned meats, and fermented fish products. The toxin blocks the release of the neurotransmitter acetylcholine at the neuromuscular junction, leading to botulism-a severe disease characterized by flaccid paralysis. Ingestion of even minute amounts of the preformed toxin in contaminated animal products can cause fatal respiratory failure, making it one of the most lethal foodborne toxins known and a critical target for strict sterilization standards in the food industry.
