Alternariol (AOH) is a toxic secondary metabolite (mycotoxin) produced by Alternaria fungi, predominantly Alternaria alternata. It commonly contaminates agricultural commodities such as grains, oilseeds, fruits, and vegetables. When contaminated feed is consumed by livestock and dairy animals, alternariol can be transferred into animal-derived foods like milk, meat, and eggs. Known for its distinct endocrine-disrupting properties, it acts as a mycoestrogen and a weak androgen agonist. Furthermore, alternariol exhibits genotoxic, mutagenic, and cytotoxic capabilities, potentially inducing DNA strand breaks and inhibiting topoisomerases, which raises public health concerns regarding chronic dietary exposure through animal products.
