Aflatoxin M1 (AFM1) is highly relevant to animal-derived food safety. It is a metabolite of Aflatoxin B1 (AFB1), a potent mycotoxin. When dairy cows consume feed contaminated with AFB1, their bodies metabolize it into AFM1, which is then secreted into their milk. This poses a significant public health risk because AFM1 retains a similar toxic and carcinogenic profile to its parent compound. Consequently, milk and dairy products from contaminated animals can become a direct source of exposure for humans, especially infants and children who consume large quantities of milk.
